Apricot Chicken

This insanely easy dish surprised me- I wasn’t going to make this, I was going to make my favorite classic Chicken Skewers with Lemon Butter, but my dad was raving about this super easy apricot chicken dish so I decided to try it out. It’s got 80’s vibes with prepackaged ingredients, but it’s super delicious and super easy to make- so I definitely recommend. This Apricot Chicken dish is similar to orange chicken, sweet & salty and really good. Served with rice and I like a side of caesar salad as well, recipe here.

Ingredients

6 large chicken thighs
1 cup apricot preserves
1 cup French dressing
1 package of Lipton’s French onion soup mix

Instructions

Preheat oven to 375°F

In a medium bowl, mix apricot, French dressing, and soup mix. Set aside.

In a 9x13 inch pyrex baking dish, place 6 chicken thighs skin side up. Pour mixture on top and place in oven for 50-60 minutes.

Serve with rice
