Caesar Salad with Homemade Croutons

This is my absolute favorite Caesar Salad Recipe! It is an actual umami extravaganza that will blow your tastebuds away! This Caesar Salad recipe is super easy and super worth it. I suggest making a double batch and refrigerating this for a week’s worth of luxury salads. The croutons are an amazing final touch- they can be cooked in the oven on a pan, or sautéed on the stove.

I also attached an image of a “Caesar” Dressing that my mom used to make that I was obsessed with. It is NOT a traditional recipe, it’s caesar-less (meaning no anchovies), and I don’t remember where she got it from. I’ve been getting a lot of requests for it because I mentioned it in my popular Lemon Butter Chicken Recipe. You can review the two recipes and decide which one you’d prefer!

Ingredients

Caesar Dressing
  • 1 cup mayonnaise
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons Worcestershire sauce
  • 3 teaspoons anchovy paste
  • 3/4 teaspoon salt
  • 2 garlic cloves, grated or minced
  • 1 teaspoon dijon mustard
  • 1/3 cup grated parmesan cheese + more for serving
  • 1/4 teaspoon black pepper
  • Romaine Hearts, cleaned and sliced however you prefer
Croutons
  • 1/2 loaf fluffy bread, cut into 1/2 inch cubes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced or grated
  • salt & pepper
  • fresh herbs- I use thyme & rosemary
  • 1/4 stick butter

Instructions

  1. For Caesar Dressing: In a medium bowl, add all ingredients and mix together.
  2. For Croutons: In a large bowl, toss bread, herbs, garlic and oil. Sauté in a pan on the stove with 1/4 stick of butter (optional) on medium heat until golden brown.
  3. To Serve: In a large bowl, add sliced romaine lettuce and your preferred amount of dressing and toss together until thoroughly combined. Top with freshly shredded or grated parmesan and homemade croutons!

My Mom’s NON-TRADITIONAL Caesar Salad Dressing (From the 90’s)

Ingredients

  • 1 egg

  • 3 tablespoons neutral oil (safflower / grape seed / avocado / vegetable if you have to)

  • 3 tablespoons sour cream

  • 1 teaspoon garlic salt

  • 1 teaspoon red wine vinegar

  • You could also add 1-2 teaspoons of anchovy paste to make it more traditional

Instructions

Whisk together. Pour over romaine. Add lots of grated Parmesan and croutons ❤️
