Ingredients
- 3/4 cup salted butter (1 1/2 sticks)
- 20 oz mini marshmallows
- 1 teaspoon pure vanilla extract
- 3 cups rice crispy cereal
- 4 cups ruffles chips, broken
- 4 cups captain crunch
- 1 cup white chocolate chips
- 1 - 2 teaspoons coconut oil
Instructions
- Lightly grease a 9x13 inch baking pan with butter or parchment paper.
- In a large pot, melt the butter over medium heat. Stir occasionally to ensure even melting and prevent burning.
- Once the butter is melted, add the mini marshmallows to the saucepan. Stir continuously until the marshmallows are completely melted and the mixture is smooth. This should take about 5-7 minutes.
- Once the marshmallows are melted, remove the saucepan from heat. Stir in the pure vanilla extract.
- Pour the rice crispies, chips, and cap'n crunch into the saucepan with the melted marshmallow mixture. Use a spatula or wooden spoon to gently fold the cereal into the marshmallow mixture until it's evenly coated. Make sure to really mix it well!
