Ingredients

  • 3/4 cup salted butter (1 1/2 sticks)
  • 20 oz mini marshmallows
  • 1 teaspoon pure vanilla extract
  • 3 cups rice crispy cereal
  • 4 cups ruffles chips, broken
  • 4 cups captain crunch
  • 1 cup white chocolate chips
  • 1 - 2 teaspoons coconut oil

Instructions

  1. Lightly grease a 9x13 inch baking pan with butter or parchment paper.
  2. In a large pot, melt the butter over medium heat. Stir occasionally to ensure even melting and prevent burning.
  3. Once the butter is melted, add the mini marshmallows to the saucepan. Stir continuously until the marshmallows are completely melted and the mixture is smooth. This should take about 5-7 minutes.
  4. Once the marshmallows are melted, remove the saucepan from heat. Stir in the pure vanilla extract.
  5. Pour the rice crispies, chips, and cap'n crunch into the saucepan with the melted marshmallow mixture. Use a spatula or wooden spoon to gently fold the cereal into the marshmallow mixture until it's evenly coated. Make sure to really mix it well!
  6. Once the cereal mix is coated with the marshmallow mixture, quickly transfer it to the prepared baking pan. Use the spatula or spoon to spread the mixture evenly in the pan, pressing down gently to compact it.
  7. In a medium bowl, add white chocolate and coconut oil and microwave in increments of 20 seconds until completely melted. Stir in between each increment.
  8. Drizzle white chocolate over top of rice crispies. You can either leave the white chocolate in a drizzle pattern, or use a spatula to spread it evenly creating a thin layer.
  9. Allow the rice crispy treats to cool and set in the pan for at least an hour. You can speed up the process by placing the pan in the refrigerator.
  10. Once the treats have cooled and set, use a sharp knife to cut them into squares or rectangles of your desired size.
  11. If you have leftovers, store them in an airtight container at room temperature for up to 3 days. They can also be frozen for longer storage; just make sure to wrap them tightly in plastic wrap before freezing.
