Homemade Neapolitan-Style Pepperoni Pizza

I am topping the dough with a super bright homemade tomato sauce, Jarlsberg cheese & fresh mozzarella, and then finish with some slices of pepperoni & a sprinkle of red pepper flakes. This recipe is a few steps above a normal pepperoni pizza- recipes below!

Jim Lahey Pizza Dough

Recipe:

3 3/4 cups all-purpose flour
1/4 teaspoon active dry yeast
2 teaspoons fine sea salt
1 1/2 cups cool water 

Instructions:

1. In a medium bowl, thoroughly blend the flour, yeast, and salt. Add the water and, with a wooden spoon and/or your hands, mix thoroughly.

2. Cover the bowl with plastic wrap or a kitchen towel and allow it to rise at room temperature (about 72°) for 18 hours or until it has more than doubled.

3. Flour a work surface and scrape out the dough. Divide it into 4 equal parts and shape them. For each portion, start with the right side of the dough and pull it toward the center, then do the same with the left, then the top, then the bottom. Shape each portion into a round and turn seam side down. The mounds should not be sticky; if they are, dust with more flour & cover with towels for another 2-3 hours

4. Preheat Grill with pizza stone inside to 500°F for about 30 minutes prior to cooking pizza

5. Prepare pizzas

6. Cook pizzas until crust is bubbly and slightly charred and cheese is melted. It took me about 10 minutes on the grill this time because it was about 45-50°F outside and a little windy. *Time will vary*


Fresh Tomato Sauce

2 medium tomatoes, sliced into quarters
5 basil leaves
pinch of salt
1/2 teaspoon oregano 
1/4 cup olive oil
2 teaspoons anchovy paste
1/2 teaspoon black pepper
1 garlic clove

*Use a blender or food processor to blend*

Put all of the above ingredients in blender, and blend until pureed. Use as is on top of pizza!

Jarlsberg Cheese
Fresh Mozzarella
Pepperoni
Crushed Red Pepper Flakes 

These pizzas are completely customizable!
