Homemade Spicy Chicken & Waffles

 

Who doesn’t love an amazing weekend brunch consisting of Chicken & Waffles? This recipe will make it so that you do NOT need to travel to the nearest trendy restaurant to get it! You’re in for a mega gluttonous treat with these spicy buttermilk chicken thighs atop homemade Belgian waffles that have the perfect amount of crisp and crunch in every bite! If you do not own a waffle maker, just make pancakes instead!

RECIPES

Spicy Fried Chicken Thighs

Ingredients:

Marinade Ingredients:
2 cups buttermilk
1 teaspoon paprika
1 teaspoon white pepper
1/2 teaspoon black pepper
1/2 teaspoon cayenne
2 teaspoon salt
1 cup sliced onions
3 cloves garlic
6 boneless skinless chicken thighs

Dredging Mixture Ingredients:
2 cups all-purpose flour
1 1/2 tablespoons baking powder
Seasoning Mixture:
2 teaspoons paprika
1 teaspoon cayenne
1 teaspoon celery salt
1 teaspoon oregano 
1 teaspoon basil 
Black pepper
1 1/2 teaspoon salt

Belgian Waffles Ingredients:
2 1/4 all-purpose flour
1 tablespoon baking powder
3 tablespoons sugar
1/2 teaspoon salt
1 teaspoon cinnamon
2 large eggs, separated
1/2 cup grape seed oil
1 teaspoon vanilla extract
1 cup whole milk
1 cup buttermilk

EXTRAS
Blueberries
Strawberries
Butter for serving
Maple syrup
Powdered sugar

Fried Chicken Thighs Instructions:

1. Make marinade first- mix spices together in a small bowl, set aside

2. Place the onion, garlic, buttermilk and seasoning mix into blender and blend.

3. Place the chicken thighs in marinade in a covered bowl and chill for 1-12 hours- the longer the better!

4. While chicken is marinading, mix together the seasoning mixture 

5. In a large bowl, combine flour, baking powder, and seasoning mix together and set aside

6. When the chicken thighs are done marinading, heat oil in cast iron pan to 350°F

7. Slowly lower dipped chicken thighs into oil- flip after 4-6 minutes until breading is golden and cook for another 4-6 minutes. Lay on a rack for 5 minutes and start cooking waffles

Waffle Instructions:

1. Whisk dry ingredients together in large bowl

2. In another medium bowl, beat the egg whites with hand mixer until stiff white peaks form and set aside

3. In a separate medium bowl, mix together egg yolks, grape seed oil, buttermilk, whole milk, and vanilla

4. Add the milk mixture to the dry ingredients and mix well

5. Fold in egg whites

6. Pour batter into hot waffle iron and follow manufacturers cooking instructions


Spread butter on top of fresh waffle, then top with chicken thigh (and any other fun toppings), pour hot maple syrup on top and then sprinkle with powdered sugar. Enjoy immediately!
