Soft Shell Crabs
  • 4 cleaned soft shell crabs- Ask your seafood counter to clean them, or remove the face, gills, and apron before cooking.
  • ½ cup all-purpose flour, for dredging
  • Neutral oil, for frying
  • Flaky salt, for finishing
  • 4 Butter swim biscuits or English muffins or carbs of your choice
  • Lemon wedges (optional)
  • Chives for garnish (optional)
  • SOFT SHELL CRAB BATTER:
  • 1 cup all-purpose flour
  • ¼ cup cornstarch
  • 1 teaspoon baking powder
  • 1½ teaspoons kosher salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon black pepper
  • 1⅓ cups ice-cold plain soda water, plus more as needed
Creole Hollandaise
  • 3 large egg yolks
  • 1 stick (½ cup) salted butter, melted and very hot
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Creole seasoning
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper

  • 4-8 Eggs
  • 1 cup white vinegar
  • 1 cup water

  1. Pour 2–3 inches of oil into a heavy-bottomed pot and heat to 350°F.
  2. In a large bowl, whisk together 1 cup flour, cornstarch, baking powder, salt, smoked paprika, cayenne, and black pepper. Slowly whisk in 1⅓ cups of ice-cold soda water just until combined. The batter should have the consistency of thin pancake batter. Add more soda water, 1 tablespoon at a time, if needed.
  3. Pat the soft shell crabs completely dry. Lightly dredge each crab in the remaining ½ cup flour and shake off the excess. Dip the crabs into the batter and allow the excess to drip off.
  4. Carefully lower the crabs into the hot oil and fry for 3–4 minutes per side, or until golden brown and crispy. Transfer to a wire rack and season lightly with flaky salt. Fry in batches as needed, allowing the oil to return to 350°F between batches.
Poached Eggs
  1. In a medium bowl, combine equal parts water and vinegar.
  2. Crack the eggs (3 at a time max) into the mixture and let sit for 10 minutes, making sure not to overcrowd the bowl.
  3. Meanwhile, fill a medium pot about ¾ full with water and bring to a boil. Reduce to a gentle simmer.
  4. Using a ladle, gently lift each egg from the vinegar mixture and transfer it into the simmering water.
  5. Cook for 2–3 minutes, until the whites are set and the yolk is still runny.

Creole Hollandaise
  1. Add the egg yolks, lemon juice, Dijon mustard, Creole seasoning, smoked paprika, cayenne, and hot sauce, if using, to a blender. Blend until combined- for about 10-15 seconds.
  2. Place the immersion blender firmly against the bottom of a tall, narrow container. With the blender running, slowly stream in the hot melted butter while keeping the blender at the bottom. Once the sauce begins to thicken and emulsify, slowly move the blender up and down until all the butter is incorporated and the hollandaise is smooth. If the sauce is too thick, blend in hot water, 1 teaspoon at a time, until it reaches the desired consistency.
Assembly
  1. Split the warm butter swim biscuits. Place one fried soft shell crab over each biscuit and top with a poached egg.
  2. Spoon the Creole hollandaise generously over the top. Garnish with chives or green onions and a light sprinkle of Creole seasoning or smoked paprika. Serve immediately with lemon wedges.
