  • 3 jumbo white onions, finely diced (about 10 cups raw)
  • 5 tablespoons salted butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2–4 tablespoons water, as needed (for deglazing)

Animal Style Sauce
  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 2 tablespoons sweet pickle relish

Instructions

Caramelized Onions
  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Add diced onions and continue cooking 40-60 minutes, stirring every few minutes, until deeply golden, jammy, and sweet. *Don't rush this!
  3. If the pan begins to stick, add small splashes of water to deglaze and scrape up the browned bits.
  4. Remove from heat. You should have about 2 cups caramelized onions. Set aside.
Animal Style Sauce
  1. In a bowl, stir together mayonnaise, ketchup, sweet pickle relish, dill pickle relish, white vinegar, yellow mustard, sugar (if using), salt, and pepper.
  2. Taste and adjust seasoning as needed. Set aside.
American Cheese Dip
  1. In a medium saucepan over medium low heat, add the milk and softened cream cheese. Whisk until completely smooth.
