- 3–4 garlic cloves, minced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 cup BBQ sauce (I like Sweet Baby Rays)
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- 44 oz baked beans (I like Bush's Baked Beans- Maple & Cured Bacon)
- 1 cup all-purpose flour
- 1½ teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- pinch black pepper
- 3 tablespoons salted butter, melted
- 1/3 cup buttermilk, plus 2-3 tablespoons extra if needed
- 1/2 cup sharp cheddar cheese, shredded
Instructions
- Preheat oven to 350°F.
- Cook the bacon in a large Dutch oven or heavy oven-safe pan over medium heat until crispy. Transfer the bacon to a paper towel-lined plate.
- Remove most of the bacon grease, leaving about 2 tablespoons in the pan.
- Add the onions and cook until softened, about 5–7 minutes. Stir in the garlic and cook for another 30 seconds until fragrant.
- Add the ground beef, salt, and pepper. Cook until browned and crumbled. Drain excess grease if needed.
- Stir in the BBQ sauce, brown sugar, apple cider vinegar, and baked beans. Fold in about half of the bacon.
- Bake uncovered for 25 minutes until thickened and bubbling around the edges.
- Remove and sprinkle with remaining bacon and cook for another 10 minutes.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, and pepper.
- Stir in the cheddar cheese.
- Add the melted butter and buttermilk. Stir just until a soft, sticky dough forms. Add another splash of buttermilk if needed — the dough should be soft and scoopable, not dry.
- Remove the beans from the oven and drop the biscuit dough over the top in 8-10 balls.
