Ingredients

BBQ Beans
  • 12 oz bacon, sliced into slivers
  • 1 lb ground beef
  • 1 large white onion, chopped
  • 3–4 garlic cloves, minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup BBQ sauce (I like Sweet Baby Rays)
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 44 oz baked beans (I like Bush's Baked Beans- Maple & Cured Bacon)
Cheddar Biscuits
  • 1 cup all-purpose flour
  • 1½ teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • pinch black pepper
  • 3 tablespoons salted butter, melted
  • 1/3 cup buttermilk, plus 2-3 tablespoons extra if needed
  • 1/2 cup sharp cheddar cheese, shredded

Instructions

BBQ Beans
  1. Preheat oven to 350°F.
  2. Cook the bacon in a large Dutch oven or heavy oven-safe pan over medium heat until crispy. Transfer the bacon to a paper towel-lined plate.
  3. Remove most of the bacon grease, leaving about 2 tablespoons in the pan.
  4. Add the onions and cook until softened, about 5–7 minutes. Stir in the garlic and cook for another 30 seconds until fragrant.
  5. Add the ground beef, salt, and pepper. Cook until browned and crumbled. Drain excess grease if needed.
  6. Stir in the BBQ sauce, brown sugar, apple cider vinegar, and baked beans. Fold in about half of the bacon.
  7. Bake uncovered for 25 minutes until thickened and bubbling around the edges.
  8. Remove and sprinkle with remaining bacon and cook for another 10 minutes.
Cheddar Biscuits
  1. In a bowl, whisk together the flour, baking powder, baking soda, salt, and pepper.
  2. Stir in the cheddar cheese.
  3. Add the melted butter and buttermilk. Stir just until a soft, sticky dough forms. Add another splash of buttermilk if needed — the dough should be soft and scoopable, not dry.
  4. Remove the beans from the oven and drop the biscuit dough over the top in 8-10 balls.
  5. Cover tightly with a lid or foil and bake for another 18–20 minutes.
  6. Remove the lid and bake another 3–5 minutes if you’d like a little more color on top- this is optional.
